  • How to sharpen your filleting knife

    Here's a little video I've made in response to a few requests as to how to sharpen your knives - I hope it'll be of help to those who want to learn. If you've any further questions, please ask and I'll do my best to answer them. Apologies for having to split the video into three parts but I had to work within the constraints of Photobucket!     spot on gary lad, wor lass is gonna have me doing all the knives in the house now lol only i use an oil stone 4 my knives & chisels so it's put here off lolol.
    we just need loads of fish this season 2 blunt them again eh m8.

      Aye Bill, here's hoping for a lot more codlings this winter! Nothing wrong with an oilstone if you're familiar with the sharpening technique - I'd say to people just make sure you get a nice fine one. A lot of those sold at ironmongers & the like are far too coarse & abrasive for the fine edge you need on a filleting knife.

            many thanks. An excellent well presented video, Always wanted to be able to sharpen a knife properly and always failed. cannot wait to give it a go now .Thanks again

                Brilliant informative video, we think we know how to do things in this life, I can now sharpen a knife properly after 50 something years, never too old to learn.

                  I'm glad it seems to be helping a few people As with anything, it takes a bit of practice, so don't worry if you don't get it right first time...best to practice on an old knife first

                          I've had quite a few people asking me for recommendations as to what knives to buy, that will hold up better than the readily available "cheapies". I'd suggest that you have a good knife that stays in the house and possibly a cheaper one that you may want to take fishing with you. For one that's going to go in your bag or box, you'll obviously want one with a sheath - the one that stays in the house can be of better quality and usually that means a knife from a kitchen supplier. I've added a few links to knives that I'd consider worthwhile, but there are many more - these are just a few suggestions.

                          For "housebound knives you may want to look at:

                          Victorinox - Filleting Knife Flexible: Amazon.co.uk: Kitchen & Home
                          Good value for money from the people who make the Swiss Army knives. Would also be good for outdoors if popped in a sheath.

                          Sabatier & Stellar 20cm/8 Inch Flexible Carving/Filleting Knife
                          Currently at a bargain price and also available in a 6 inch model.

                          Tojiro Senkou 15cm Boning Knife SK-3707
                          At the high end of the price scale, but well worth it! Good enough for Heston...

                          Kai Shun 15cm Boning Knife DM-0710
                          I have several Kai/Shun knives myself and would seriously recommend them - very easy to sharpen and a scalpel-like edge to the brilliant VG10 steel.

                          For an "outdoor knife":

                          Marttiini Knives
                          The 6 inch Filleting Knife Classic is the one I'm using in the video & have had it for over 30 years - still going strong! Lots of others to choose from too.

                          Helle Fiskekniv 155-mm Knife
                          One for those who like a bit of flash!

                          Hope this gives you some ideas & worth shopping around.

                              Cheers, glad it's of help - it takes a bit of practice to develop your technique so don't be put off if your first attempts are a bit ropey. I always advise people to practice on old knives first, maybe an old kitchen knife, before spending money on a good knife.

                              I hope to add another short video soon with a tip on how to help make sure you're getting the right angle to your edge - which is the key to a good blade.
