Cooking fresh fish

I would'nt know mate.......can't catch any fresh fish:( :( I do have a mate who kindly gives me some and i batter cod and bass or trout and such i score, rub with herby stuff and cook in foil in hot oven for 10-12 mins:)

If you watch Rick Stein he usually comments on how fresh the fish is when he cooks it and it curls up...

Curly fish

Curly fish

It's a good sign if it curls up. It means the fish hasn't been through rigor-mortice and the muscles haven't relaxed ready for decomposition. Yum-yum.:D:o

Some fish like haddock and mackeral, are best over the gunwhale and into the pan,but cod imho taste better after rig has set in , taken out of the fridge after a day or two, brought to kitchen temp before frying/cooking. Decent size cod taste better if they have been frozen for a few weeks. everybody has their own ways i suppose. Wallsendo youv'e been watching too mutch ray mears lol. :D poor little rocklings :(
