i just cover them with water m8 & change water every 2-3 days, depending on the mussel that is. if i miss a dead 1 it can quickly destort the water.
1 thing i have notice when i am going 2 use that day is the longer i leave them in shells the better, i will peel them 1-2 hours b4 a match & put in2 sealed bags then pop in fridge, most lads i know shell them the night b4 & put in fridge overnight so they soak up the juices but i think most of it is water anyway so do mine b4 i go.
shell mine & put on a cloth then bag & pop in fridge, lash them on with crab so have no probs in flying of the hook.
i do the same thing if going 2 freeze any down, i dry them on a old cloth just 2 get rid of as much of the water as i can then freeze in sealed bags with all air out because water & air is the main cause of freezer burn.
