Cart Wings

Alright lads. Ive been making cart for the past couple of winters now and ive got a system where i break the crab open and collect all the cart/coral in a bucket then pour into moulds and freeze which works fine. This year i want to use cart wings but i always seem to damage/burst them when i try and get them out the shell. Can anyone give me any tips on how to do it correctly?

break crab open with handle side of knife heavier one preferably on top shell straight in the middle ,break in half ,use knife blade scrape outside of wing like ya do with mussle when shelling ,shud come out as one side wing place on newspaper with a bed of salt do same with over half of crab ,left with berrys etc in middle of carkus of crab scrape into tub
