Freezing fish

The way I have always kept/stored my fish for a number of years are as followed:-
Caught on day 1 and to be eaten the following day, the fillets are put in the fridge on a dish/tray which will allow the water in the flesh to drain off, fresh fish contains a lot of water.
Caught on day 1 and kept for future use, I vacuum pack them flat and fast freeze them.
When the frozen fish are taken out for use, they have the full day to thaw and rid themselves of water.
I personally wouldn't leave fish in the fridge for any length of time, if I intended to freeze them.

Cheers guys filleted and frozen caught today ! I have had fresh caught cod on the day and ate 2 days later kept in the fridge (no choice dont have a freezer in the caravan)and it was lovely and firm and nice and dry would three days be chancing it ?

As has been said, supermarket fish can be 2-3wks old. A trawler goes out for 10 days, say catches on day 2 onwards, then get back to port, fish sold in market, transported to warehouse before being transported again to a local store where it sits on the counter daytime and fridge at night, so I think 3 days in the fridge would be fine!

When it starts smelling of fish it isn't very fresh. I never buy fish from a supermarket for eating.

Its worth pointing out they're kept on ice the whole time, fish live close to 0 to - in the sea so deteriorate in a standard fridge very quick.
 
I asked my wife how long i could keep a chicken in the freezer and she said 3 month! Had a look at it the next morning and it was dead
 
I never fillet my fish on the same day as caught, gut and head them as soon as possible stops blood leaking into flesh, then in the fridge for 24hrs, fillet them straight from fridge and the flesh is really white and firm, then either eat within another 24hrs or freeze as soon as filleted.
