Boat refurbishment project

Hi all looking for a little advice, I have a couple of questions relating to an old classic small speedboat I have.

She has a fiberglass hull with real nice classic lines that is in fantastic condition but the wood around the top is rotten there is chrome in place at the bow and stern that is in good nick and the front what the steering would have been mounted on has long gone so I was going to just clag a bit of pine around the top and forget about replacing the steering and just use it as it is.

However this may be a bit ambitious but I have been fortunate enough to have been given (rescued from a skip) some hardwood planking about 4cm across by 1cm thick so I thought I could make this old girl look real nice giving her a top coat in the similar style of the old classic Riva boats and was wondering

1. Does anyone know what that white line between the planking is on the front deck as I don't want to build it up and get a high gloss on to crack off when whatever I use starts to shrink or something, is it some kind of caulk or is it thin strips of different colored wood that I thought would be a good choice?

2. I’ve seen on the net high gloss wooden kayak`s that you wouldn't know it to look at but are covered in fiberglass sheeting and resin for the high gloss finish as well as to protect the wood, if anyone has done this I wondered what would their opinions be on using this method on this project?

Any Ideas or advice appreciated.

Thanks for the advice there`s some good reading there however I`m beginning to think it may be above my skills level I may have to settle for a sheet or two of ply and get the jigsaw out it seems a far easier option the wood I have will give a good edge edge the ply
