I like to fish the south side off the rocks, 2 hours or so either side of LW. Don't chuck too far, as the deeper channel runs along the southern side of the harbour. Best with a good sea running, no good when it's flat. It'll also throw up good bags over HW, when you can fish off the south breakwater (but be careful if there are any swells running in - they can loom up & sweep over the top, so it's often best only to go along to cast out then retreat back and keep your gear well back.
There are good gullies on the north side - Goatsies, Nancies & Mary's which are full of kelp & can be fished when the sea's not so big - and the prom there can also fish well over HW chucking into the back of Goatsies gulley.
I've always found crab/mussel & big lug/blacks baits the best.
