Hi Lads, looking for some recommendations for a high quality knife. Bought a Berkley knife about a year ago and its crap, blunt, had it sharpened still crap. Money no object just want quality, what are you guys using.

if you local to north shields get your self to caley's at fish quay and buy 1 from there reasonably priced from around tenner up over depending on you want ther very sharp . i have had mine for about 8years cost £12 it was that sharp you could possibly shave with it and mine still good ,it 's wat most of the fish filleters use if not all of them and was one of them that recomended them to me
Yeah, the Berkeley ones are terrible - I sharpened one for somebody a while back and I don't know what steel they use but it's a F@*!?*g pain to take an edge. Somewhere in my post on sharpening your knife I listed a few that I found online from various Cook's suppliers, which are generally the best option. The commercial style ones as suggested that are available from the shops on the quay are also way better than the ones that are generally available in tackle shops. My old Normark Martinni is still going strong after over 30 years of use, although these days it generally just gets taken out in the summer to fillet mackerel as I catch them before they get chucked in the cool-box.
Get a stiff bladed one much better than the flexible ones vicornix do a beautie bowt 12-15 quid from my local fishmonger. All filliters use them or very similar blades...... flexible ones are asking for trouble esp if ya skimming the backbone you lose meat and nick ya fingers where stiffer blades tend to get stuck.
I was bloody useless at filleting then my stepdad (filleter when first left school) had a look at my blade he explained to me what I have done you now I can fillet granted I aint super quick but every fillet is neat nd tidy skinned nd boned.
Victornox knife it is then ??? Sorry bowt the spelling mine is the black handled boning knife I also had one that was slightly angled like a persian knife I struggled like hell 2 use that so now I just stick to the boning knife ..... lads use the rapalas ect to me ghey are prob a good knife but over priced when u can get one just as good if not better for half the price...... remember any sharp knife can fillet and everyone has different preferences but these for the price u will not fall off
Got a taylor's eye witness from north shields fish quay about 20 years ago and it still keeps a good edge, as said Victorinox are excellent the last time i was in caley fisheries they had them the commercial ones are far better you never see the lads on the quayside using the type you get in the tackle shops
