Filleting Knives - again - probably

With all the big Cod around surely filleting knives have to get some airing.

I'm after a large knife but more importantly I think a good sharpener is more important anyone have any recommends. The guys in this video use a manual
sharpener and I guess they know their business anyone know where these may be bought ?

I have always used Caley fisheries down Tanners bank in North Shields , its right next to the fish quay, and supplies the professional filleters and the trawler fishermen, they supply everything you could possibly require in a commercial fishing capacity, my most recent knife cost about a tenner,I was just there a couple of weeks ago for marine paint and they were a fraction of the cost of other folks around. I highly reccommend them. (I've no connection to them by the way...lol.)

got mine from caley's north shileds, and have had it bout 5 years and it still does the business when needed and expect it to for many years to come also invest in a butchers steel the best you can afford and any fish filleter will tell you the secret of keeping a knife sharp is to sharpen the kife little but often and if yo pop along and ask one of the filleters, most will give show how to do it properly

also the knife cost £12 and managed to pick the steel from the local flea market for a few quid and still would've been cheap at double the price than i paid as a really good steel can cost £100 +
 
just bought a mustard knife from north east tackle in seaham paid 6;99 comes with sharpner and sheath the knife is razor sharp well worth the money
 
always use an oil stone to sharpen my knives, have used steels, and other sharpeners but always end up back with the oil stone.

Think you could be right with the oil stone the other steels & shapeners give you a sharp edge but my grandfather & a lot more reckoned the stone put the finnish to it

butcher and fish filleter do this for a living and if you watch them sharpen a knife they take the knife over the steel just a few times but often that way they have razor sharp knives all the time
