could anybody tell me what is the best and quickest way to dispatch flatties they seem to stay alive forever

Mate, if they're Dabs a good firm whack just behind the eyes should quickly do it. Don't be shy - a good firm strike.

If they're plaice, the same.

If they're flounders, stick'em back cos they're watery and horrible anyway. But if you're still keen, the same as above.

As long as you've got a good 'priest' or something similar, it's not a problem really.

They can take quite a bit despatching with a priest, the best way to kill them quickly is to break there necks. lie them flat and push there heads backwards till you hear a snap. Works every time for me, none of this flapping around half an hour later.

I take Plaice & Dabs for the Table, if they are big enough, & find the only way to despatch them quickly is to Gut them and cut their Heads off. Hate to see Fish flapping around in a bag suffering.
