I reckon all the info you have been given here is spot on. I fished for haddock off the west coast of Scotland for many years and though you can catch them on just about anything, shellfish and worms were the best bait. I used to fish 2 down 1 up or three down with 1'0 hooks. Baits were rag, lug, mussel and cockles. With cockles slightly edging it though not by much. Shellfish was a must have bait! The ground we found most of them on was not the muddy holes that prawn trawlers fished but soft/sandy bottoms with more fish coming off banks than totally flat ground.
They fight all the way up to the surface, and as Codseeker said, they definitley taste better than cod, and they rarely have worms in them.
Would be great if they came close inshore again and could be caught of the piers.
