You could also marinate the tuna in Soy, Honey and Rice wine vinegar.
with a bit of chilli for a thai style dish. It works on the prinsiples of the Hot, Sour, Sweet, Salt theroy that nearly all thai food is based on.
You could if you get a long enough loin of tuna roll it in peppercorns and sear it and make a carppaccio of tuna served with green salad with a light citrus dressing.
